Frogmore Stew: Traditional South Carolina Lowcountry Boil

In Charleston, where history and culture run deep, one of the most beloved local dishes is Frogmore Stew. Despite the name, this iconic meal contains no frogs, but rather is a delightful seafood boil that captures the essence of the Lowcountry’s coastal heritage.

Frogmore Stew, also known as Lowcountry boil, hails from the small community of Frogmore on St. Helena Island, just south of Charleston. The dish was born in the 1960s when National Guardsman Richard Gay, who ran a seafood market, first made it to feed a large group of soldiers during a training exercise. The simplicity and scalability of the recipe made it an instant hit, and it quickly became a staple for gatherings throughout the Lowcountry.

What makes Frogmore Stew unique is its reflection of the region’s coastal environment, blending fresh shrimp, crab, corn, and sausage with bold, savory flavors. This communal meal has been a symbol of Southern hospitality, where friends and family gather to share not only food but also stories and experiences. The Recipe: Lowcountry Living on a Plate

Ingredients:

  • 4 quarts of water
  • 1/4 cup Old Bay seasoning (or another seafood boil seasoning)
  • 2 pounds of small red potatoes
  • 1 pound of smoked sausage, sliced
  • 6 ears of fresh corn, halved
  • 3 pounds of fresh, shell-on shrimp
  • Lemon wedges, butter, and cocktail sauce (for serving)

Instructions:

  1. In a large stockpot, bring water and Old Bay seasoning to a boil.
  2. Add the potatoes and cook for about 10 minutes until they begin to soften.
  3. Add the sausage and corn to the pot, continuing to boil for another 10 minutes.
  4. Add the shrimp and cook for 3-4 minutes, or until the shrimp turn pink and are fully cooked.
  5. Drain the pot and serve the contents directly onto a newspaper-covered table or platter for a traditional presentation. Don’t forget the lemon wedges, melted butter, and cocktail sauce on the side for added flavor.
